Honey is a sweet food made by bees using nectar from flowers. The 60,000 or so bees in a beehive may collectively travel as much as 55,000 miles and visit more than two million flowers to gather enough nectar to make just a pound of honey!

Nectar is as much as 70 percent water, while honey is only about 20 percent water or less. The foraging bees regurgitate the nectar and pass it to worker bees in the hive. Worker bees get rid of extra water by swallowing and regurgitating the nectar over and over. They also fan their wings over the filled cells of the honeycomb to evaporate most of the water from it. These bees then gradually transform the nectar into honey by this process retains all kinds of sugar and the plant's aromatic oils. Same time, worker bees add enzymes from the bees' mouths to break sucrose into glucose and fructose. With lower water and sucrose, worker bees will seal the honeycomb with beeswax. These are the honey ready to be collected. U.S. Grade A honey contains less than 18.6 percent moisture.
